My prescribed text for our school is pretty bland,:uhoh: but my main question is:

Is it important to finish the whole text or read "interesting chapters" ?

I'd personally recommend actually reading the entire novel.

I know it's tempting to just read the chapters your teacher says are important, but when it comes down to writing your essays and selecting what themes/characters to talk about, you're going to write best about whatever you feel makes the most sense, not what your teacher/majority of your class focuses on.
Although of course sometimes there are exceptions... depends on the complexity of the text.
