I just realised how badly I want to do undergraduate medicine at university...
I don't do any mathematics or chemistry however.
I am high 80s/90s in all of my subjects(Advanced english, biology, PDHPE, business studies, TVET nursing course) so getting the required ATAR of 94 or so for UWS shouldn't be an issue.
Will not doing chem or maths inhibit me from doing undergrad medicine?

How 'badly' do you want to do medicine? If there is a will, there is a way. Chem or Maths are not integral to UWS medicine, if you study then you shouldn't feel any disadvantage.

it won't inhibit you tbh, the chem knowledge you need is very basic and either covered in your lectures anyway or one of the many bridging course you can go for.

Nothing you need to know will be missed by the undergrad teaching.
