The 2020/21 math extension 1 and 2 exams are the only ones completely abiding by the new syllabus.

Are all past HSC exams before them even worth doing then?

Absolutely. The vast majority of the topics in the current syllabus overlaps with the old syllabus. You just need to know which topics are relevant.
