Anatomy definately involves dissection. I'm not too sure about Physiology, maybe a little. Or maybe you only need to view posters of the dissected human body.

Physiology no; but there are some pracs involving pricking your finger to look at your blood, and looking at urine too i think (human; i.e. possibly yours)
