Elixer (one of Katie Noonan's projects) - Mists of Ruse

If you're crazy good you could do something like Dream Theater - Dance of Eternity... but I doubt it

The Cat Empire (Electric Piano stuff) - The Lost Song, The Wine Song, The Crowd, The Car Song.

It's not really "popular" music, It was a pop song in Japan. It's Eternity (Memory of Lightwaves) from Final Fantasy X -2.
