I cant find up to date outlines for ACCY100 or BUS110... does anyone have a link to this or know what the required readings for week1 are?

If there are no up to date outlines for the subjects then it's the uni's fault.

If you needed to be read for them, you could always take note of everything and actually revise when you know what you've read what you're supposed to have read.

You should get a copy of the subject outline in first week of lectures, and as there are no tutorials in Week 1, there won't be required readings until Week 2.
