Well, the best source for information in regards to how the eruption occurred and it's various stages is Pliny the younger.

The land was elevated because of various volcanic activity over the years and the same activity led to having fertile soil in which they planted many crops and grapes. They also had a pretty good marine life to sustain them in terms of food and before the eruption, no one actually knew that Mt Vesuvius was a volcano.

The first few excavations carried out were by treasure hunters and as a result, the cities have been looted and a lot of the archaeological value is lost.

The deaths and Pompeii were painful because the poisonous gas usually got them but the ones at Herculaneum were instantaneous largely due to the high temperature of the ash and pumice.

Pompeii has heaps of plaster casts made from the bodies and Herculaneum has skeletons.
