I think you can do a diploma of education for just 1 yr instead.

Your first subject teaching area would be Engineering Studies:
A major in engineering or engineering. At least 2 years (4 units) of degree
studies (3 years of degree level study
with at least 4 units at level 2 or above)
including studies of the application of
engineering principles and methods,
management and problem-solving in
engineering contexts, and
responsibilities of engineers in society.

Second subject area (need fewer subjects in) for maths requires:
At least 2 years (4 units) of degree
level study in pure or applied
mathematics with 2 units at level 2 or
above (must include algebra and
calculus). One unit only of statistics
may be counted provided it is studied
as a stand-alone unit.

Taken from NSW Institute of Teachers: Subject Content Requirements (abridged) - only relevant for NSW. If you have the maths bit already, all you have to do is a Grad Dip Ed (or some uni's do a graduate entry Bachelor of Teaching/Education for just the tail end bit). Some uni's are now doing secondary Dip Ed's over 1.5 years to cover the Aboriginal education/IT/dealing with disabled students type subjects but think there might be some 1 year ones left.
