I'm currently enrolled in 2 different full-time degrees at 2 different unis.

I have to make my response (accept/defer/reject) the offers by 23/1/2014 morning.

So what would happen if I keep being enrolled in both courses beyond this date?

Ye, I'm doing commlaw atm and got med offer via uac. Have to respond soon. However, I'm still deciding which one to choose.
If i stay in commlaw and accept med for some time after response (accept/defer/reject) via uac is due what would happen. srs question

Nothing. You have until the census date to withdraw without penalty.

You have until the cencus date to withdraw as stated by rafy, but you should withdraw sooner than later as there might be issues with hecs etc :)
