How do you all spend your last summer break ( from mid Dec to end of Jan) before the HSC? Studying, tutoring, relaxing?
My kid is preparing for HSC 2018, want to know what top students do as a reference.

If his basics in maths, physics, chemistry, etc in any subject isn't strong, then make sure his/her basics are up to scratch or else he/she will have a bit of difficulty in year 12
This advice will be mainly for HSC 2018 (because the curriculum will change in 2019)
English:
I'd look at things such as how to deconstruct essay questions, thesis samples, look at some discovery essays/creatives, brush up on language techniques, look for a related text (imo this will help you technique wise and with the short answer response)
Maths: brush up on basics if needed. Self learn the topics that you will be learning for the term e.g. if his/her school will be learning permutations and combinations as well as parametrics, he/she would spend his/her holidays self learning perms and combs as well as parametric to ensure that basics are covered and when the school term comes, he/she can just focus on harder questions
Science: look at videos from letslearnscience and other youtube channel to familiarise yourself with difficult concepts. IMO sometimes it takes ages to understand things properly and if your son/daughter can't understand something straight away don't worry. Try doing textbook questions when necessary and I would high recommend making notes during school holidays (since they can take ages to write, especially if you are too fussed about how much information you need)
Humanities: same thing as science. Also look at relevant case studies and statistics where neccessary
