for the dissecting kidney prac, we were meant to have identified the pelvis, medulla and cortex. do we need to know what these are involved in?

Yes you should.

You should at least know the following:

Capsule - protective covering of the kidney
Medulla - where most reabsorption occurs
(Show the position of a nephron)
Ureter - tube carrying urine to the bladder
Pelvis - where collecting ducts empty urine
Cortext - where filtration occurs.
