Changes made online or via UAC's InfoLine before midnight (Sydney time) on Thursday 5 January 2006 will be considered in the Main Round of offers.

mean that change of preferences closed 10 minutes ago, or that we have until midnight on the Thursday night?

Yeah, I never really thought about it...but midnight on the 5th would technically mean 10 minutes ago (as of, the time of ur post), since midnight is the 5th. However, I'm pretty sure we have all of Thursday to change preferences.
