I dont think they'll hire you if you say you only have one day a week avaliablity, why not apply for christmas casual jobs, I did and they told me it fits in nicely with full-time uni work loads :)

I know I had much better things to say if they asked more diverse questions

I was talking to my CA and Legal teacher and they all know someone doing the Diploma and suggested I dont do it

tell me about it, the situations I was practicing were much harder and longer... For convo like you, I was not expecting those questions, I was expecting thigs like "Secondo te, La scuola e stata un esperizena positva?"
