To be honest, I am not exactly physically attracted to her. But I want to date her and spend time with her as a couple...

So you sound like you don't want to let go for the fear that something COULD develop? So maybe just don't take an active role in pursuing these emotions. Let the friendship flow, let her control the pace, because you seem to be quite a bit ahead of her. Maybe it's best to simply, do nothing?

I know how you feel.

Things like having lunch together in some cafe, taking walks in the park and prattling away about anything and everything, and watching TV together while in some sort of snuggling position - correct?

Haha, since everyone giving advice seems to be male, here's a female perspective:
If you really like her, you shouldn't go out of your way to ignore her.
If she's doing special things for you like getting you subway, then obviously you're not JUST a friend, or at least she considers you a really good friend

So keep being good friends, or maybe even best friends, and maybe the more she gets to know you and trust you, she will fall for you and want to be with you.
If you're really keen for it to happen, then just wait and see how it will turn out. If you've already told her you like her and it hasn't been super awkward afterwards, then obviously she isn't completely repulsed and trying to stay away.

She does Arts. Not much of a maths person...

But I have once told her that she was the constant term to my equation and I never want to differentiate... :\
